Herbed Salmon with Sweet Potatoes and Green Beans

This no-fuss dinner recipe highlights one of our favorite proteins: Salmon. Salmon is rich in heart and gut-healthy omega-3 fatty acids and pairs well with herby, lemony flavor notes.

This easy-to-cook fish dish is also ready to eat in less than 20 minutes.

This recipe is low FODMAP, GERD-friendly, dairy-free, and gluten-free.

Makes 4 servings

What you’ll need

Sweet Potatoes

  • 2 cups sweet potato
  • ¼ tsp paprika
  • ¼ tsp cumin
  • 1 tbsp extra virgin olive oil
  • ⅛ tsp salt

Green Beans

  • 4 cups fresh green beans
  • 1 tbsp extra virgin olive oil
  • Salt and pepper (to taste)

Salmon

  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • ½ tsp salt
  • 1 tbsp lemon juice
  • 4 salmon filets (5-7 oz. each)

Directions

1. Preheat oven to 425°F.

2. Line a large baking sheet with aluminum foil and a medium baking sheet with parchment paper.

3. Halve the sweet potatoes lengthwise and cut into ¼-inch thick slices.

4. Add the sweet potatoes to a large mixing bowl, and toss in paprika, cumin, olive oil, and salt. Spread over half of the large baking sheet.

5. Spread the green beans over the other half of the large baking sheet and drizzle with olive oil. Season the green beans with salt and pepper.

6. Place the large baking sheet in the oven and cook for 15 minutes or until the green beans blister and the sweet potatoes are soft.

7. While the green beans and sweet potatoes are cooking, place the salmon filet on the parchment-lined baking sheet. In a small bowl, combine the dried oregano, basil, thyme, parsley, salt, and lemon juice and distribute the herb mixture evenly over the salmon filets.

8. Insert the parchment-lined baking sheet into the oven, and bake for 10-15 minutes or the salmon reaches an internal temperature of 125-135°F. Remove the salmon from the oven and allow to rest for 3-5 minutes before serving.
