Recipe: High Protein Chocolate Mousse
Indulge in dessert with our high protein chocolate mousse. What’s the secret to its creamy texture? It’s a combination of gut-friendly tofu and unsweetened coconut milk.
Not only does tofu add a rich, creaminess, but it also boosts the protein content, making this dessert a satisfying and healthy snack option.
This recipe is low FODMAP, dairy-free, gluten-free, vegetarian, and vegan.
Makes 4 servings
What you’ll need
- 8 oz. firm tofu (230 g), cut into cubes
- ¼ cup maple syrup
- ½ tsp vanilla extract
- ¼ cup canned unsweetened coconut milk
- ⅛ tsp cinnamon
- ⅛ tsp salt
- ¾ cup dark chocolate chips
Directions
1. Add the tofu, maple syrup, vanilla extract, coconut milk, cinnamon, and salt to a food processor. Process on high until smooth.
2. Add the chocolate chips to a microwave-proof container. Place them the microwave, heat for 30 seconds, and stir. Repeat the process until the chocolate chips are completely melted.
3. Add the melted chocolate to the food processor and process on high until the chocolate is fully incorporated.
4. Scoop the mousse into ½-cup containers and refrigerate.
