Nutty Stuffed Dates

This classic combo makes for a sweet and savory snack or a showstopper appetizer that’s easy to prep in no time at all.

Pistachios are high in fiber—a serving contains about 3 grams. The body ferments and transforms this fiber into gut-friendly short-chain fatty acids.2

This Mediterranean diet recipe is GERD-friendly, gluten-free, and vegetarian.

Makes 4 servings

What you’ll need

  • 8 pitted Medjool dates
  • 8 tsp goat cheese
  • 3 tbsp roasted and salted pistachios
  • Honey

Directions

1. Stuff each date with a teaspoon of goat cheese.

2. Finely chop the pistachios and place them in a shallow bowl or dish. Dip the seam of each date into the pistachios and dab a couple of times so that the pistachios form a line down the seam.

3. Drizzle with honey before serving.
