Recipe: Monster Cookie Energy Balls
These sweet treats make the perfect on-the-go snack.
The bite-sized energy balls contain old-fashioned oats, chia seeds, and peanut butter for fiber and by using a food processor, minimal effort is required to prep them for snack time.
This recipe is low FODMAP, GERD-friendly, gluten-free, and vegetarian.
Makes approximately 20 energy balls
What you’ll need
- 1 ½ cups old-fashioned oats
- ½ cup creamy peanut butter (100% peanuts)
- 1 tsp vanilla extract
- 1 tbsp chia seeds
- ½ cup maple syrup
- ¼ tsp salt
- ⅓ cup mini M&Ms or mini dark chocolate chips
Directions
1. Add the oats to a food processor. Process on high until you get a coarse flour mixture.
2. Add the peanut butter, vanilla extract, chia, maple syrup, and salt to the food processor. Process on high until combined.
3. Mix the mini M&Ms or dark chocolate mini chips into the ‘dough’ with a spatula.
4. Divide and roll the ‘dough’ into 1-inch balls.
