Banana-Oat Blender Pancakes

Old-fashioned oats and bananas make up the base of this recipe, replacing the traditional flour used in most pancake recipes. The result? Delicious flapjacks that are high in fiber and gentle on the gut.

This recipe is low FODMAP, GERD-friendly, gluten-free, and vegetarian.

Makes approximately 10 pancakes (4-inches each)

What you’ll need

  • 2 cups old-fashioned oats
  • 2 firm bananas
  • 2 eggs
  • 2 tsp baking powder
  • ½ tsp cinnamon
  • ¾ cup lactose-free whole milk
  • 1 tbsp sugar
  • Avocado oil

Directions

1. Add the oats to a blender. Blend on high until the oats become flour. 

2. Add the bananas, eggs, baking powder, cinnamon, milk, and sugar (if using) to the blender container. Blend on high until the ingredients form a batter.

3. Heat a cast iron or ceramic pan over medium heat. Add avocado oil to the pan to coat.

4. Scoop ⅓ cup of batter at a time into the pan. Cook until golden brown on both sides. Repeat with the rest of the pancake batter.
