Recipe: Seedy Pizza Crackers
These cheesy, tomato-y flavor bombs are made with low-lactose parmesan cheese, fiber-rich oat flour, and sunflower seeds for added texture and nutrients. They’re a perfect everyday snack and gourmet enough to serve at gatherings.
This Mediterranean diet recipe is gluten-free and vegetarian.
Makes approximately 40 crackers
What you’ll need
- 1 cup oat flour
- 1 tbsp chia seeds
- 1 tbsp dried oregano
- 3 tbsp parmesan cheese
- 2 tbsp extra virgin olive oil
- 2 tbsp tomato paste
- ¼ cup water
- ¼ tsp salt
- ¼ cup sunflower seeds
Directions
1. Preheat oven to 400°F and line a medium baking sheet with parchment paper.
2. Combine the oat flour, chia seeds, oregano, olive oil, tomato paste, water, and salt in a medium mixing bowl.
3. Add the sunflower seeds to the dough and mix until well combined. The dough should be pliable but not sticky.
4. Place the dough on the parchment paper. Put another piece of parchment paper over the top. Roll the dough between the sheets of parchment paper with a rolling pin until it’s roughly 1-2mm thick.
5. Remove the top parchment paper and cut the crackers into 1-inch squares using a pizza cutter. Arrange the squares so there is a ½-inch gap between each cracker.
6. Insert the baking sheet into the oven and bake for 15 minutes or until the edges of the crackers are crispy and golden. Remove the baking sheet from the oven and allow the crackers to cool.
