Mindy Antimie is a registered dietitian with years of experience across a broad range of specialties, including gastroenterology, diabetes, heart disease, oncology, surgery, critical care, and kidney disease. At Oshi, Mindy helps patients build a healthier, more confident relationship with food while managing digestive symptoms. Her approach is centered on helping patients eat the widest variety of foods possible while still achieving symptom control and improving quality of life. Rather than focusing on restriction, she works from a place of addition—focusing on sustainable nutrition strategies that support digestive health and enjoyment of food.
She has a particular interest in supporting patients with inflammatory bowel disease (IBD) and irritable bowel syndrome (IBS). Her care is rooted in personalization and whole-person care. Mindy recognizes that digestive health is influenced by much more than diet alone and takes this into account when developing nutrition recommendations for patients. She believes the most effective care plans are the ones that fit seamlessly into a patient’s real life.
Drawn to the complexity of GI care and the powerful role nutrition can play in symptom management, Mindy enjoys helping patients better understand their conditions and discover practical solutions that support their digestive health.
Outside of work, she enjoys reading, writing, hiking, and spending time in nature.
